Historically, European countries such as Germany, Spain, and Italy were key players in asparagus cultivation. However, in recent decades, China’s output has skyrocketed, reaching 7.69 million metric tons in 2022, making up over 85% of global production. This shift can be attributed to China’s large-scale farming practices and favorable growing conditions, particularly in regions like Hebei. Meanwhile, Peru and Mexico are prominent exporters, capitalizing on the off-season demand in markets like the U.S. and Europe. Asparagus, known for its labor-intensive harvest, continues to be a valuable crop globally, with rising demand due to its health benefits.
