Trends in mushrooms are attracting attention at Japan’s agricultural central vegetable wholesale markets. According to data from December 2022, trading volumes of Enoki mushrooms reached a maximum of 6.43 kilotonnes. Meanwhile, the price of fresh shiitake mushrooms reached a record high of 3.44 million yen. Additionally, the price of fresh shiitake mushrooms peaked at 1,160 yen per kilogram. These figures indicate that the demand for mushrooms is increasing. In particular, demand for shiitake mushrooms is notable, with their high prices reflecting strong demand in the market. Demand for mushrooms is likely to remain stable and prices will remain high in the future.
