Historically, cauliflower cultivation in the U.S. has fluctuated due to factors such as market demand, crop rotation practices, and climate conditions. In the early 2000s, the area planted was around 30-35 thousand acres, gradually increasing as consumer interest in healthier foods, including cauliflower, rose. California remains the primary producer, benefiting from its favorable growing conditions. The expansion reflects rising popularity and versatile culinary uses of cauliflower.
