Global production of root vegetables (potatoes, carrots, radishes, etc.) is widespread, with the main producing countries being China, India, Russia and the United States. In particular, China is the world’s largest producer of potatoes and carrots. Root vegetables play an important role in food security because they are highly nutritious and relatively easy to store. Production is highly dependent on climate and soil conditions, and different varieties are grown to suit each region. Furthermore, technological innovation and the introduction of efficient agricultural techniques are helping to increase production and improve quality.
