Abstract
At the central wholesale market for leafy stem vegetables in Japanese agriculture, based on data from December 2022, Chinese cabbage had the largest volume, trading at 59.3 kilotons. On the other hand, green onions were the most expensive, trading at 6.05 million yen. In terms of price, mitsuba was the highest, selling for 1,410 yen per kilogram. These data show that Chinese cabbage and green onions are traded in large quantities in the market and have high demand. Furthermore, the relatively high price of mitsuba indicates its rarity and demand. Considering their economic value and demand trends, it can be said that these vegetables play an important role in the market.

Looking at data from January 2006 to December 2022 at central wholesale markets for leafy vegetables in Japanese agriculture, cabbage trading volume peaked at 112 kilotons in May 2006. However, since then, trading volume has fallen to just 45.5% of its peak level. This trend suggests that there have been changes in demand and production of cabbage. This could be due to changes in demand or the increasing popularity of other vegetables. This suggests that agricultural markets are changing in response to trends. To maintain a balance between supply and demand for agricultural products, farmers and market participants need to be sensitive to changes in the market and adjust their production plans and distribution strategies.

However, prices are now down to 95.3% of their peak. This trend shows that the price of mitsuba has been declining since its peak. This is likely due to changes in supply and demand. One possibility is that the increasing popularity and production of other vegetables may be a factor. Agricultural product prices fluctuate according to the supply and demand balance in the market, affecting farmers and consumers. Farmers and market participants need to develop production plans and pricing strategies taking price fluctuations into account.
