Abstract
The production and import of vegetables in Japanese agriculture is also an important factor for mushrooms. According to 2022 data, the price of domestically produced fresh shiitake mushrooms was 934 yen/kg, while imported products were 668 yen/kg. These figures show that domestic prices tend to be higher than imported products. This difference is thought to be due to factors such as domestic production environments, labor costs, and transportation costs. Additionally, there may be high demand for domestically produced fresh shiitake mushrooms in the Japanese mushroom market. There is also a trend toward increased demand for domestically grown vegetables due to support for local industries and increased awareness of food safety. On the other hand, imports play a complementary role in meeting demand and are price competitive. Overall, Japan’s mushroom market is a mix of domestic and imported mushrooms, meeting consumer needs while maintaining a balance between supply and demand.
Domestic mushroom prices
The price trends of domestically produced vegetables in Japanese agriculture, particularly fresh shiitake mushrooms, are interesting to look at when looking at the data from 2004 to 2022. The price peaked at 1,040 yen/kg in 2008 and has now fallen to 89.8% of that amount. This trend may be due to increased supply resulting from technological innovations in agriculture and improved production efficiency. Other possible factors include changes in consumer values and increased imports of foreign products. On the other hand, fresh shiitake mushrooms have a long history in Japanese food culture and are a valuable local industry, so demand for them is relatively stable. However, falling prices are a challenge for producers, and there is a need to establish a sustainable production system. Overall, the market for domestic mushrooms is undergoing change, but efforts continue to emphasize quality and safety while maintaining a balance between supply and demand.

The maximum is 1.04kYen/kg[2008] of Fresh shiitake mushrooms, and the current value is about 89.8%
Import prices of mushrooms
Japan’s agricultural vegetable import market recorded the highest prices among all prefectures, according to the latest data for 2022. Enoki mushrooms alone are priced at 810 yen per kg, which is the current highest price. Past trends suggest that demand for imported products is increasing in the Japanese vegetable market. Imported vegetables serve the needs of consumers and industries as a stable supply is expected throughout the year. Additionally, the diversification of quality and variety of imported vegetables is also contributing to increased demand. However, factors such as price competition and currency fluctuations may also have an impact on the market for imported vegetables, which includes high-priced enoki mushrooms. Competition from local produce and food safety concerns are also some of the characteristics of the imported vegetable market. In general, domestic and imported products coexist in Japan’s vegetable market, maintaining a balance between supply and demand while meeting the diverse needs of consumers.
